Chicken wings are really freaking simple and really freaking good.
Prepare the wings by chopping off the tip of the wing that has no meat. You can discard this or use it in stock.
Cut the wing in half at the joint.
Coat the wings in olive oil and sprinkle salt and pepper.
Grill the chicken over indirect heat. Start skin side down, do not turn the wing until the appropriate time or the skin will rip off. Grill approximately 15 minutes on each side, or until done.
Place cooked wings in a large bowl. Add 1 cup of Buffalo sauce and shake the bowl till all the wings are coated. Serve with celery and either ranch or blue cheese dressing. Carrots are optional.
