Smoked Bacon Wrapped Stuffed Jalapeños

Smoking bacon wrapped stuffed jalapeños will require a little patience from you assholes, but if you plan it right, you can enjoy a beer or two while you cook. These little bastards are delicious and worth waiting an hour and a half for.

Alright, bitches! Smoked Bacon Wrapped Stuffed Jalapeños are the bomb! Low, slow, and smokey goodness. If you want to impress the shit out of your friends and family, try this recipe!

How to Smoke Jalapeno Poppers

To smoke jalapeno poppers you want to cook them low and slow at 225º to 250º F. for about 1 and 1 half hours. This creates a delicious, yet still crunchy popper that has a delicious spicy kick.

What Temp To Cook Jalapeno Poppers

The temperature depends on how you are cooking them. Deep frying needs to be around 375º F. Baking can be done around 350º to 400º F. For smoking I want to leave the temperature around 250º F. These are general rules of temperatures I follow, you may have your own ideas. The main thing is to make sure the bacon is cooked.

What To Make Jalapeno Poppers On

I bought this little roaster for jalapeños at Homo Depot, I mean Home Depot. Fuck it! I call it “homo” depot because if you go there in any given big city on a Saturday morning, you will see all the gay couples there with their latte’s planning there next remodel project. I know this because I am this person. We all do it, gay or straight, but we gays make it more fun! Afterall, if you look up the word “gay” there are at least two meanings, one of which is “lighthearted and carefree”. Anyway, what I like about this roaster is that it sets up the peppers so the cheese doesn’t melt out. It also allows the bacon to cook evenly. You could prop the peppers up in a muffin pan, but then the bacon grease pools up on the bottom and overcooks the bottom part of the poppers.

What Sauce For Jalapeno Poppers

Let’s face it, this is not a gourmet food we’re talking about its pub food. You could develop some delicious sauce to go with it or just be a lazy asshole like me and use good old blue cheese or ranch dressing. It tastes delicious, cuts the heat down a bit, and is super fucking simple.

Which Cheese For Jalapeno Poppers

The two kinds of cheese I have used most often are cream cheese and goat cheese. I find a mixture of the two is really good too. I have read other recipes using cream cheese with some shredded cheddar. That might be something I try next.

  • 12 large jalapeno peppers
  • 1 pkg soft cream cheese
  • 12 slices bacon
  1. Preheat the oven or grill to 225F

  2. To prepare the jalapenos I recommend wearing some food handlers gloves or non-powdered surgical gloves. The oils on the peppers can linger on your hands even after you have washed them. This can be quite painful if you forget and rub your eyes.

  3. Cut the top of each jalapeno pepper and remove the seeds and membrane. Use a vegetable peeler or use a special tool designed for this.

    Hollowed out jalapeño peppers.
  4. Fill each pepper with cream cheese to the top.

    Fill jalapeños with cream cheese.
  5. Wrap each pepper with bacon and prop up on a roaster.

Jalapeños poppers prepped and ready for smoking.
  6. Place in the smoker at 225º F. for 1 and 1 half hours.

  7. Let cool slightly and serve immediately with blue cheese or ranch dressing.
